Ingredients
- 1 Onion
- 2 cloves garlic
- 1 red bell pepper
- 4 big ripe tomatoes
- 2 tbsp tomato paste
- 1 tsp chili powder
- 1.5 tsp cumin
- 1 tsp paprika
- 0.5 tsp cayenne pepper
- 1 pinch of sugar
- 4 Eggs
- fresh parsley
Steps
- Chop the onions in small cubes, mince the garlic and cut the
tomatoes and pepper in small cubes.
- Add the onions to some olive oil and sauté them for a couple of
minutes.
- When the onions are soft, add the garlic and mix for a minute.
- Add the pepper aund let it sauté for 5 minutes until also the pepper
is soft.
- Add the tomatoes with a bittle of water to the mix, add the tomato
paste and stir.
- After everything is blended, add the spicing and let it simmer for
7-9 minutes until it started reducing.
- Crack the eggs open and place in to the sauce. Now add a lit and
allow to simmer for another 7-8 minutes.
