Ingredients
- 250 g canned Chickpeas
- 60 ml fresh lemon juice / 10 ml lemon concentrate
- 40 ml Tahini
- 2 cloves garlic
- 50 ml olive oil
- 10 g Corriander
- 1 tsp ground cumin
Steps
- Mix the Tahini before taking it from the can. Afterwords combine the
Tahini and lemon juice until smooth.
- Add the olive oil, cumin, and 1/2 teaspoon salt to the mixture and
mix well.
- Add the crushed garlic cloves and the corriander.
- Drain and rinse the Chickpeas, keeping some of the Chickpeas-water.
Add half of them to the mixture and use a food processor to mix.
- When everything is smooth, add some of the Ckickpea water and the
rest of the Chickpeas.
- Again use the food processor until the Hummus is smooth. When needed
add a little more of the water.
Variations
Instead of canned Chickpeas, one can use 200g of dried Chickpeas.
They should be soaked with water before following the above recipe for
around 24h.
