Take the sourdough started and feed it with 50g of whole wheat flour
and 60ml of water. Set aside for at least 3h.
Mix the yeast with the luke warm water and sugar. Set aside for 5
minutes until is gets foamy.
Mix the flours with the salt, add the sourdough and the yeast with
the water. Knead for 5-10 minutes in a kneading machine or for 15-20
minutes by hand. Add a wet cloth over the dough and set aside for 2-4h.
If a clay-dutch oven is used, now is the time to water it.
Fold the dough carefully and start heating the oven to 220°C with
the dutch oven inside.
After 30 minutes add the bread carefully to the dutch oven and bake
for 35 minutes on .
After 35 minutes remove the lid and reduce the heat to 180°C. Bake
for another 15-25 minutes, depending on the preferred crust.
Let it cool down for 2h or better over night on a wire-stand.
